Roll out your pastry and brush with a thin layer of chutney before placing a long log of sausagemeat on top. Enclose in the pastry, then cut into 5cm lengths and chill on a baking tray before baking. At this stage, the rolls can be frozen – just add 10 minutes to the baking time to cook from frozen.

This two-step recipe is straightforward, but not for the faint-hearted. The marinade packs a punch, as it contains scotch bonnet chilli. Rub garlic, chilli and spring onions into the ribs, then coat with the remaining ingredients before cooking over a moderately hot barbecue for 20-30 minutes.
