Cocktail club

Oyster half filled with lemon peel and cocktails

Finely chop the peel of 1 preserved lemon and put in a bowl. Stir in 1 tbsp bitters and 2 tbsp fresh orange juice. Use the mixture to top 6 freshly shucked oysters and serve immediately.

Japanese-inspired

Oyster half filled with Japanese-style chopped herbs

Very finely chop 3 coriander sprigs, 1 small deseeded red chilli and 1 tsp sushi ginger. Stir in the juice of ½ lime, then spoon the mixture over 6 freshly shucked oysters.

Scandi-style

Oyster half filled with dill, capers and lemon

Mix ¼ chopped pack of dill with 1 tsp small capers and the zest and juice of 1 lemon. Use the mixture to top 6 freshly shucked oysters and serve straight away.

Middle Eastern

Oyster half filled with pomegranate seeds and molasses

Combine 25g pomegranate seeds, the zest and juice of 1 lime and 1 tbsp pomegranate molasses. Serve alongside 6 freshly shucked oysters to drizzle over just before eating.

Mediterranean chic

Oyster half filled with celery and vermouth

Very finely chop 1 small celery stick and mix with 2 tbsp dry vermouth. Divide between 6 freshly shucked oysters to serve.
