Spend less time over the stove with this low-maintenance Greek roast lamb. Start by grinding garlic, oregano, lemon zest, a pinch of salt and a drizzle of olive oil in a pestle and mortar to make a paste. Rub a leg of lamb with the paste, nestle in a pan with potatoes and roast. Use up the pan drippings in a tomato sauce and add pitted baby Kalamata olives.

For an alternative to lamb, try this succulent one-pot beef brisket & braised celery. Marinate a piece of rolled beef brisket in full-bodied red wine for up to 24 hours. Brown the beef in a casserole dish, then add vegetables, garlic and herbs, and braise in the marinade. Leave to rest, then carve and serve with our domino Dauphinoise.

Vegetarians will love this impressive veggie spiral pie with spiced tomato sauce & chopped salad. This challenging dish is well worth the effort. The flaky filo pie is filled with rice, lentils, spinach, herbs and feta cheese. It's delicately spiced with turmeric, nutmeg and allspice. 4) Pot-roast chicken with stock

This pot-roast chicken with stock is the perfect main for any springtime Sunday lunch. Brown a whole chicken on all sides in a large flameproof casserole dish. Add large onion wedges, fresh thyme, garlic and peppercorns, and cook with white wine and chicken stock. Bake for two hours in the oven and serve with the onions and some of the stock poured over. Nothing says Easter like a gorgeous roast leg of lamb. Cater for a crowd with our easy one-pan lamb with hasselback potatoes. Prepare the lamb up to a day ahead by making tiny cuts and filling with cloves of garlic and fresh thyme. Slice the potatoes and insert with bay leaves. Roast the lamb with the potatoes, fresh herbs and olive oil. Serve drizzled with our green olive & herb dressing.

Minimise washing up with this easy, one-pan herby spring chicken pot pie. Simmer shredded chicken thighs, spring onions, spinach, wholegrain mustard and chicken stock for 10 mins. Then stir through frozen peas, crème fraîche and fresh herbs. Scrunch filo pastry on top and bake for 20 mins or until golden brown.

7) Spiced roast side of salmon

If your family prefers a lighter main, try this five-star spiced roast side of salmon. This healthy dish is super speedy, taking less than 30 mins. Rub the salmon with a mix of ginger, paprika, black pepper, honey and wholegrain mustard. Roast for about 20 mins, then slice into portions and serve with lemon wedges on the side.

Try this Italian-style roast pork with crispy crackling for an elegant take on porchetta this Easter Sunday. Begin preparing the pork loin by pouring a kettle full of boiling water over it – this tightens the skin and ensures great crackling. Next, rub a mixture of garlic, bay, black pepper, sea salt and fennel seeds all over, and tie with string. Then roast the joint and prepare a gravy with the pan drippings and marsala.

Celebrate earthy flavours with this vegetarian stuffed butternut squash. Stuff the squash with pearl barley, nuts, leeks, feta cheese and dried cranberries or apricots. Delicately season with coriander and fennel seeds, and fresh herbs like sage and rosemary. Serve with tahini sauce and scatter with parsley.

10) Slow-roasted shoulder of lamb

Cook this slow-roasted shoulder of lamb for a beautifully tender result that melts in the mouth. Make a flavourful marinade by blitzing shallots, cherry tomatoes, anchovies, white wine, fresh herbs and spices in a food processor. Marinade the lamb overnight, then roast on a low setting for five hours. Pull the lamb apart with forks and serve with roasted onions and gremolata scattered over.
