How to make roast potatoes even better

  • Chop up 1kg roast potatoes into large chunks and boil in a pan of water for 15 mins
  • Drain and steam dry the potatoes then gently shake the pan to fluff them
  • Place the potatoes onto a baking tray and drizzle with 2 tbsp sunflower oil
  • Season with salt and pepper

1. Smoky roasties

  • Sprinkle 2 tsp smoked paprika and 1tsp chilli flakes over the potatoes
  • Toss them slightly to distribute the spices

2. Stuffing roasties

  • Sprinkle over 30g dried stuffing
  • Toss potatoes slightly to distribute the spices
  • Place 10 mini sausages among them

3. Curried roasties

  • Sprinkle over 1tbsp curry powder and 1tsp nigella seeds
  • Toss potatoes slightly to distribute the spices

4. Herby roasties

  • Peel and throw in 3 garlic cloves amongst the potatoes
  • Sprinkle over the leaves from a handful of rosemary, thyme and sage

Roast the potatoes

  • Bake in the oven (200C/180C fan/gas 6) for 1hr 10mins
